Crockpot Chicken Taco Chilli - Deeeeelish!



Here is a recipe from one of my FAVORITE Blogs! We made this for dinner tonight and everyone LOVED it!! 


"There is nothing like a lazy Sunday when you have a meal cooking all day in the crock pot and the aroma of food is in the air, or coming home from work on a weeknight and having dinner ready when you get home. I love my slow cooker and this chicken chili is a delicious, low point, high fiber meal. It's so easy to make and it is great over rice, with multi-grain chips, topped with low fat cheddar cheese or low fat sour cream. This makes a lot and it is even better the next day for lunch!"

Servings: 10  Size: 1 1/4 cups  Old Points: 3 pts  Points+: 5 pts
Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g  • Protein: 16.9 g

  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
  • 1/4 cup chopped fresh cilantro
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).




6 hours was a little long for us today -- so to make the process a little quicker we boiled the chicken before hand and then added it to the crockpot! We served avacados (to garnish) and some quesadilla trianlges to add a little to the meal. So simple!!

Easy Chicken Recipe


It kind of looks like this in the pan. Chicken is covered, and its a bit colorful depending on what you season it with.

Ok...Last night..had no idea what to do for dinner. didnt want to spend forever.. so i thawed some chicken. 3 breasts in case hubby wanted more then one. put it in a pan.1.).added some cream of chicken soup to it probably about a half of the small cans or a quarter of the larger ones, 2.)along with half a jar of alfredo sauce. 3.)Seasoned it of course because my husband is not a very plain eater. So i put some crushed red peppers, salt and pepper, and some garlic(fresh) ..but you can use really anything you want. Anyways, 4.)i topped it with cheese, and crushed up cracker crums- added to the top this Hawaiian spicy/sweet sauce(its amazing) but not required. just the original recipe itself will do fine, but if you are bored with it, then you make it fun in however way you like. for instance add a little bbq sauce on top, or salsa, or something. 5.)then, i threw it in the oven for about 40 min at 350 degrees(I did 400 to speed the process a little) ....6.)You serve this dish over rice and it was fantastic. Im not going to lie, when you take it out and serve it, it does not look pretty, but it smells yummy, and Husband and i BOTH LOVEDDDD it. You should try! its really good!
